If you're like us, we don't eat dinner till around 5pm to allow time for visiting and visitors.

So here my suggestion for a hearty breakfast to keep you going.

Blarney Breakfast Bake

Ingredients:

1 pound sausagemeat
1/2 pound sliced fresh mushrooms
1 large onion, chopped
10 eggs
3 cups milk (regular or 2%)
2 tsp mustard powder
1 tsp salt
1/2 tsp ground black pepper
6 cups cubed stale bread
1 cup chopped seeded tomatoes
4 ozs shredded Cheddar cheese
4 ozs shredded Monterey Jack

Method:

In a large skillet, cook the sausage, mushrooms and onion over medium heat until meat is no longer pink; drain.

In a large bowl, whisk the eggs, milk, mustard powder, salt and pepper.

In a greased 13" x 9" baking dish, layer half of the bread cubes, tomatoes, cheeses and sausage mixture. Repeat layers. Pour egg mixture over the top.

Bake, uncovered, at 325°F for 50-55 minutes or until a knife inserted near the center comes out clean.

Let stand for 10 minutes before serving.

Yield: 12 servings.

That sounds pretty good! In the pic isn't that orange slices around the side? If it is, they would be good with it, I think...Thanks for posting it.

Yep orange slices, I was looking for an unusual recipe for breakfast on Christmas Morn.

We don't dine till 5pm to allow time for visiting and visitors.

So it had to be sufficient to sustain people till dinner.

Er...doesn't everyone usually dive straight into the chocolates, ie: maltesers, Toblerone, chocolate money, that Santa has graciously brought them? Thereby, rendering breakfast, redundant. They certainly seemed to, in my house. :roll:

When my children were young, there were 4, I gave them each a slice of homemade apple pie before they were allowed near the tree - and the goodies - and that was a special treat once a year. Dave's ideas look scrumptious to me.
