Carrot Cake (Microwaved)

Microwave time: 14-22 mins - serves 8-10 (easily)
2x 21.5cm/ 9in sandwich cake dishes or 2 large glass loaf “tins”

Ingredients
Cake
285g/ 10oz/ 2 ½ cup all purpose/plain flour
225g/ 8oz/ 1 ¼ cups sugar
225g/ 8oz carrots, finely grated
225g/ 8oz canned pineapple, drained and finely chopped
15ml/ 1tbsp ground cinnamon
10ml/ 2 tsp ground allspice
10ml/ 2tsp baking powder
4 eggs
180g/ 6oz/ 2/3 cup butter or margarine
60g/ 2oz/ ½ cup chopped walnuts

Icing
2 x 225g/ 8oz packages cream cheese (not the “light” lo-calorie ones, they don’t work)
60g/ 2oz/ ½ cup icing sugar
Juice of 1 lemon

Walnut halves tossed in icing sugar for decoration

Method
Line cake dishes with 2 layers of wax/greaseproof paper.

Beat the sugar and butter together until light and creamy.
Beat in the eggs gradually.
Add the carrots, pineapple and walnuts.
Sift the flour, baking powder and spices into the mixture, and fold in.


Divide the mix between the 2 dishes and bake 1 layer at a time for 6 mins on MEDIUM (50%) per layer. Increase the setting to HIGH (100%) and continue to cook for approx 5 mins more per layer.
Leave to stand for 5-10 mins before turning out to cool on wire rack.

ICING
Beat the cheese, sugar and lemon juice together until smooth and spreadable.
Cut the cakes in half, and sandwich together with half the icing, and spread the rest on the top (and over the sides if you have enough).
Decorate with the sugar-coated walnuts.


This cake freezes very well

My son has nut allergy.... what can I replace for the nuts in your recipe. I love carrot cake and would love to bake one to share with my son. Thanks!

How about dried fruit? That would be my choice of substitute.
(My son says this is the best carrot cake he has tasted).

Have you tried Brazils. A lot of people with nut allergies do not show the same symptoms with Brazils as technically they are not nuts but seeds.
